Ingredients (serves 6)
- 2 tbs olive oil
- 1 onion, finely chopped
- 1 leek, white part only, finely sliced
- 1 garlic clove, crushed
- 1/2 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp freshly grated nutmeg
- 1kg peeled pumpkin, diced
- 1 large potato, peeled, diced
- 1L chicken or vegetable stock
- 1/2 cup (125ml) thin cream
Heat oil in a large saucepan around low heat, put onion and leek and cook for 2-3 minutes, until melted but not coloured. Add garlic and herbs and cook, mixing, for 30 seconds. Put pumpkin, potato and all ingredients and bring to the steam. Turn heat in order to low, cover as well as simmer for 30 minutes. Allow to cool slightly, then blend in batches.
Return soup to skillet, stir through the thick cream and reheat gently. Try seasoning and add a bit more nutmeg if desired.

1 cup of vegetable margarine
1 1/2 cups of peanut butter
1 1/2 Tbs. vanilla
1 1/2 cups unrefined cane sugar
1 cup maple syrup or agave syrup
6 cups quick cooking oats
1 cup coconut, toasted
1 cup sunflower seeds, toasted
1 cup sesame seeds
1 cup chocolate chips
1/2 cup raisins
Directions to make Easy Vegan Granola Bars Recipe
In a skillet toast the coconut, sunflower seeds and sesame seeds and set aside to cool. In a large mixing bowl cream together the margarine, peanut butter, vanilla and sugar.
Add the syrup and then mix in the oats, raisins, chocolate chips and the toasted ingredients.
Press into a greased 12 x 18 inch cookie sheet and bake at 350° F in a oven for approximately 20 minutes or until golden brown. Let them cool slightly and cut into squares while still warm.

Ingredients to make Grilled Vegan Burgers
2 cans black beans (rinsed and drained)
2 carrots, grated
1/2 cup dry rolled oats
1/4 cup pepitas (pumpkin seeds)
1 tbsp olive oil
1/2 tsp cinnamon
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp chili powder
1/2 tsp onion powder
1/4 tsp cayenne pepper
1 tsp sea salt
1/4 tsp black pepper
Directions to make Grilled Vegan Burgers
Preheat oven to 300 degrees. Next, add the oats and pepitas to your food processor and grind until coarsely chopped (they will still be a little chunky). Let it run for roughly 10 seconds.
Grate the carrots, and then add to your mixture in the food processor. Add 3/4 of the beans, all spices, and the olive oil. Once all of this is in the food processor, give it a whir and mix it all together.
Spoon mixture into a mixing bowl and then fold in the rest of the whole, reserved beans. Wet your hands and then form into 6 medium sized patties. Place patties on a non-stick baking sheet or into a baking pan, and bake at 300 degrees for 40 minutes, turning once in the middle.
If you want to grill these, pre-bake them for 30 minutes at 300, and then throw them on the grill to reheat and get a little extra browning.
